Steak and balsamic-glazed mushrooms - Jamie Oliver Recipe Serves 2. 2 x 250g rib-eye steaks 300g chestnut mushrooms 1 small bunch fresh thyme 1 lemon 2 garlic cloves 1 knob of butter 1 tsp English mustard 70g rocket leaves 3 tbsp extra virgin olive oil balsamic vinegar olive oil sea salt black pepper (freshly ground) Steps: 1. Preheat your oven to the lowest setting and place your plates in the oven to warm. 2. Take the steaks out of the fridge and place on a plate to allow them to come up to room temperature. 3. Pick the thyme leaves and discard the stalks. Finely grate the zest of the lemon. 4. Drizzle the steaks with olive oil, then scatter over the thyme leaves and the lemon zest. Season well with salt and petter, then rub all of these flavours all over the meat.. 5. Place a frying plan on a medium heat (for the mushrooms). 6. Bush the mushrooms clean with a pastry brush, then trim the stalks off so they're flush with the cap. Peel and finely chop the garlic. 7. Put the griddle pan on high heat. 8. Add a splash of olive oil to the hot frying pan then lay the mushrooms in the pan. 9. Fry the mushrooms gently, all in one layer, for 5 minutes, then turn each one over with a spoon or a pair of tongs. Add the garlic and a sprinkle of salt and pepper to the pan. 10. When the mushrooms are soft and the garlic is golden brown, turn the heat off and add the butter and a drizzle of balsamic vinegar. Shake the pan about so all of the mushrooms get nicely coated. 11. Lay the steaks in the screaming hot griddle pan. Press down on them lightly with the tongs to make sure they're in good contact with the ridges of the pan. 12. Cook on each side for about 2 mins for a 2cm thick steak - this will give a medium rare steak, but cook for less or more time on each side depending on how you like your steak. 13. Once done, use tongs to transfer the steaks to a plate to rest for a min or two. 14. Cut the lemon in half and squeeze a tablespoon of juice into a mixing bowl. 15. Add the extra virgin olive oil, mustard and a good pinch of salt and pepper then whisk lightly to make a dressing. 16. Make your table look respectable - get the cutlery, salt and pepper and drinks laid out nicely. 17. Pour the resting juices from the steak into the mixing bowl with the dressing and toss the rocket through it. 18. Get your warm plates out of the oven and divide the mushrooms between them, then drizzle over all the lovely juices from the pan. 19. Thickly slice the steaks and lay on the plates next to the mushrooms, pile the dressed rocket on the side and tuck in! Medium Ribeye Steak with Spinach Look ever so few carbs! This steak was seared and cooked on low/medium heat on a griddle pan but unfortunately ended up slightly overcooked... I prefer my steak rare to medium rare... this ended up medium after being left to rest for just over 10 minutes. Topped with a peppercorn sauce.
